Wonderful and easy to make mayonnaise. The key to this recipe is to use a "light" oil, either avocado or light olive oil. If the oil has too much personality, then it tends to overshadow the egg and lemon. You need a stick blender for this recipe.
- Whole egg
- 1/2 tablespoon of lemon or lime juice
- 1 teaspoon white wine vinegar
- 1/4 teaspoon dijon mustard
- 1/4 teaspoon salt
- 1 cup of light oil, see the note above
Add egg, juice, vinegar, mustard, and salt into a jar or cup that came with your stick blender.
After adding the above ingredients, add the oil.
Place the stick blender into the jar and begin mixing the ingredients. Once the mayonnaise starts to emulsify and thicken, move the blender up and down to combine the ingredients thoroughly.
Congratulations! You have lovely mayonnaise that will last up to one week in the fridge.
