Baked Banana Oatmeal Muffins


Find two bowls, one for dry ingredients and one for wet ingredients and a muffin pan.   Rub muffin pan with butter(you dont' need butter the pan if you use baking cups). Set oven to 350F (175C).  

Dry Ingredients

Combine the following dry ingredients into a large bowl:

  • 3 - Cups of Rolled Oats
  • 2 - Teaspoons of baking powder
  • 1 - Teaspoon of cinnamon
  • Pinch of nutmeg
  • 1/2 Teaspoon of salt

Mix the dry ingredients all together and set the aside.

Wet Ingredients

In a separate bowl combine the wet ingredients:

  • 1 cup or 2 - 3 bananas, the darker sweeter.
  • 2 Eggs
  • 1 1/2 Cups of milk or unsweetened almond milk

Mash the bananas thoroughly. Mix in the two eggs and 1 1/2 cups of milk.

Batter Mix and Bake

Add in the wet ingredients to the dry ingredients. This should create a wet moist batter. Add the mixture to the buttered pan, fill the holes in evenly, a little bit at a time.

Place in the oven for 20-30 minutes until golden brown on top.
